With the heat of summer and the fact that we have longer days, we would often like to eat something light and also at dusk. Ideally, a quick and easy dinner, as well as an easy and healthy dinner. Here is a healthy food recipe for a quick bite.
Based on one of my favorite marinades, this healthy food recipe is a quick and easy dinner that can be made for 1 or more people (if you’re having fun). What I did earlier this week was to prepare halibut over brown and wild rice mixed with dates and green beans served separately. This easy and healthy dinner did not take long to prepare.
The ingredients to be used for this quick meal are:
1 portion of halibut
To start this dinner fast and easy, marinate the halibut in a bowl with equal parts of olive oil, balsamic vinegar (2 tablespoons each) and one or two cloves of garlic. Cover the sole and place the fish in the refrigerator for about two hours.
In the meantime, follow the cooking instructions on the back of the packaging for wild rice and brown rice and cook the two types of rice separately. When I made this healthy food recipe, I used 1/4 cup of wild rice and 1 cup of brown rice.
Once the two sets of rice are cooked, mix them together and add the chopped dates. Make sure to check the dates of the nuts. Let the heat of both sets of rice warm the chopped dates. Reserve the rice.
After the sole is marinated, cook the fish in the oven until soft and flaky, but not raw in the middle. To make dinner really quick, buy freshly frozen green beans and heat it on the stove while cooking the sole.
If the rice cools, put it in the microwave for a few seconds to reheat it. Place the rice on the plate, put the cooked halibut on top and then the cooked green beans on the side, and you will have a quick and easy dinner using a healthy food recipe.
I like to save even more time preparing dinner in the summer and I often prepare my portion of combined rice in advance and refrigerate it. I prepare a few portions and then take them to this dish or another quick meal that I can prepare during the week.
